Apple Pecan Spelt Muffins

This muffin flavor combo says, "Hello Fall" with its combination of apples, pecens, and cinnamon. Spelt flour adds extra nutrients, and the softness of the muffin with the crunch of the topping makes it especially enjoyable

Ingredients
  

Crumble

  • 3 Tbsp Coconut Sugar
  • 4 Tbsp Finely Ground pecans
  • 1 Tbsp Wheat Flour
  • 1 Tbsp Oats
  • 2 Tbsp Butter
  • 1⅓ Tsp Cinnamon

Muffin mix

  • 1⅓ Cups Spelt flour
  • Cup White wheat flour
  • ½ Cup Ground pecans Lightly Toasted
  • ½ Cup Coconut sugar
  • Tsp Baking powder
  • ½ Tsp Baking soda
  • 1 Tsp Ginger
  • 2 Tsp Cinnamon
  • ½ Tsp Nutmeg
  • 2 Eggs
  • ¼ Cup Olive oil
  • 1 Cup Apple Juice Unfiltered
  • 2 Tbsp Apple cider vinegar Unfiltered
  • 2 Tsp Vanilla extract
  • 1 Cup Grated apples

Instructions
 

To make crumble:

  • Put all ingredients for crumble into a bowl and mix together with fork until mix looks like crumbs. Put crumble in refrigerator while preparing muffin mix.

To make muffin mix:

  • Set oven to 425°
  • Combine all dry ingredients in a bowl and whisk till mixed well.
  • Combine all wet ingredients in in bowl and mix well. Add apples and stir.
  • Combine all wet and dry ingredients and mix just until combined.
  • Fill muffin tins ¾ full. Top with crumble and bake at 425° for 5 minutes. Reduce to 400° and bake for about 20 minutes, or until tested with a toothpick which comes out clean.
