Pumpkin Granola

Real pumpkin goes in this granola, not just the spice. Great for breakfast, over ice cream (did I say that?), in a goody basket for someone for the holidays, or just for snacking.

Ingredients
  

  • 2 Cups Oats
  • ½ cup Hemp hearts
  • ¼ Cup Flax meal
  • ½ Cup Pumpkin seeds
  • ½ Cup Pecans Chopped
  • ¼ Cup Pumpkin powder
  • 2 Tsp Pumpkin seasoning
  • ½ Cup Maple syrup
  • 3 Tsp Coconut sugar
  • 2 Tbsp Coconut oil
  • 2 Tsp Vanilla
  • ½ Cup Dried cranberries

Instructions
 

  • Preheat oven to 325°
  • Mix all dry ingredients together except coconut sugar.
  • Whisk all wet ingredients together and add the coconut sugar, mixing well.
  • Wipe down cookie sheet lightly with oil. Place granola on pan with a thin layer.
  • Bake for 20 minutes, Stirring once after 10 minutes.
  • After 20 minutes, remove from oven and let rest for 15 - 20 minutes before eating. The granola will get crispier as it cools.
  • When Cooled down, add cranberries.
