Roasted Garlic Broccoli with Lemon

- 1½ lbs Broccoli
- 4 Cloves Garlic Diced
- 3 Tbsp Olive oil
- 1 Lemon Juice and zest
- Salt & pepper To taste
Preheat oven to 400°F
Slice broccoli and dice garlic. Set aside.
With a large bowl, fill halfway with water and ice.
Get a large pot and fill halfway with water and bring to a boil. Put broccoli into boiling water for about 2 minutes. Pull out of water and put into ice bath to shock.
Take broccoli out of ice bath and onto a sheet pan. Pour olive oil over broccoli, sprinkle on garlic, and toss with hands. Place in oven and roast till slightly brown on top and desired softness.
Sprinkle salt and pepper to taste and squeeze lemon juice and zest to taste and toss.
