Corn and Fennel Salad

New to fennel? This is a great introduction to the flavor which is complemented by the flavors of corn, tomato, cucumber, and lemon.

Ingredients
  

  • 1 Cup Corn
  • ½ Cup Fennel Sliced thinly
  • 3 Tbsp Fennel fronds finely chopped
  • ½ Cup Cucumber Diced
  • Cup Tomato Diced
  • 6 Tbsp Lemon juice
  • 6 Tbsp Olive oil
  • 2 Tbsp Rice vinegar
  • Tsp Lemon zest
  • 1 Tsp Fresh garlic
  • ½ Tsp Garlic powder
  • Salt To taste
  • Pepper To taste
  • Sweetener To taste

Instructions
 

  • For the dressing:
    In a bowl, whisk together lemon juice, olive oil, and vinegar. Add seasonings, lemon zest, and sweetener. Whisk or shake well and set aside.
  • Put corn in medium bowl.
  • Slice fennel and chop fennel fronds . Dice Tomato and cucumbers. Add to corn.
  • Pour dressing over veggies and toss well.
