Salmon and Kale egg scramble

A nutrient dense breakfast great to start off the day!

Ingredients
  

  • 3 Oz Salmon
  • Lite olive Oil Enough to oil pan for cooking
  • 4 Eggs
  • 2 Tbsp Milk or water
  • ¾ Cup Kale chopped
  • 2 Cloves Garlic Diced
  • Salt & Pepper To Taste

Instructions
 

  • Heat skillet with a little oil. Salt and pepper salmon and place in pan and cook till done and skin is crispy. Remove skin and slice into small pieces.
  • Chop kale and put in preheated pan with oil and cook till tender. Add diced garlic.
  • Put eggs in bowl with a little salt and pepper and whisk till slightly foamy.
  • Add egg and scramble with Kale and garlic in hot pan. When eggs are fully cooked, put onto plate and top with crumbled salmon and crispy skin.
