Banana Fig Bran Muffins
Bran muffins have often got a bad rap for being dry and flavorless. Not these! Not only are these muffins moist, but sweet and with the banana and orange zest, full of flavor!

- 1½ Cups Whole wheat flour
- 1 Cup Bran
- ¾ Tsp Salt
- 1 Cup Mashed bananas
- 2 Eggs
- ¼ Cup Applesauce
- ¼ Cup Oil
- ½ Cup Warmed honey
- ⅓ Cup Buttermilk
- 1 Tsp Baking soda
- ¼ Cup Dried figs Finely diced
- 1 Tbsp Orange zest Optional
Preheat oven to 375°f. Spray or grease 15 muffin tins.
Mix flour, bran, and salt. Set aside.
In mixer bowl, mix together mashed banana, eggs, oil, applesauce and honey. Stir together buttermilk and baking soda. Add to banana mixture. Stir in figs and orange zest.
Add dry ingredients together with wet, stir just till combined.
Fill muffin tins about ¾ full, and bake for about 25 minutes.
Best to serve when allowed to rest at least 15 minutes.
