Banana Fig Bran Muffins

Bran muffins have often got a bad rap for being dry and flavorless. Not these! Not only are these muffins moist, but sweet and with the banana and orange zest, full of flavor!

Equipment

  • Muffin tin for 12 medium muffins

Ingredients
  

  • Cups Whole wheat flour
  • 1 Cup Bran
  • ¾ Tsp Salt
  • 1 Cup Mashed bananas
  • 2 Eggs
  • ¼ Cup Applesauce
  • ¼ Cup Oil
  • ½ Cup Warmed honey
  • Cup Buttermilk
  • 1 Tsp Baking soda
  • ¼ Cup Dried figs Finely diced
  • 1 Tbsp Orange zest Optional

Instructions
 

  • Preheat oven to 375°f. Spray or grease 15 muffin tins.
  • Mix flour, bran, and salt. Set aside.
  • In mixer bowl, mix together mashed banana, eggs, oil, applesauce and honey. Stir together buttermilk and baking soda. Add to banana mixture. Stir in figs and orange zest.
  • Add dry ingredients together with wet, stir just till combined.
  • Fill muffin tins about ¾ full, and bake for about 25 minutes.
  • Best to serve when allowed to rest at least 15 minutes.
