Clean collards thoroughly by soaking and rinsing them to get off all the dirt off them.
Put water into pot and add smoked turkey over medium heat. When it comes to a boil, turn down to low and allow to simmer. Add garlic cloves. Cook till turkey begins to get tender. It will take about 1½- 2 hours.
When turkey is cooking, chop/dice vegetables, keep separated, and set aside.
In a small pan, put olive oil in pan and saute onions and peppers until translucent.
Once turkey has become tender, pull out garlic cloves and mash. Return to pot and stir. Add mustard, honey, salt and pepper. Add Bell pepper, onion and collards.
When collards begin to get tender, add cabbage and cook till tender. Serve.
