Chayote Corn Medley

The chayote corn medley is good served cold as a salad or a hot dish. It is tender, crisp, sweet and the lime gives it a little tartness. Add a little chili for heat, or fresh cilantro, oregano, parsley or basil for a herbalicious add on!

Ingredients
  

  • 3 Chayote
  • 1 Cup Corn
  • Limes
  • Tbsp Olive oil
  • ½ Red bell pepper
  • Salt and pepper to taste

Instructions
 

  • Chop Chayote and bell pepper into bite sized pieces.
  • Heat oil in skillet and heat pan. Add chayote and put on lid, heating on a low heat for about 5 minutes.
  • Remove lid and add bell peppers continually stirring. When bell peppers start to soften a little, add corn and salt to pan. When corn is hot, turn off flame, squeeze lime juice on veggies. and stir.
