Pumpkin Granola

Pumpkin is one of the things I look forward to in the fall. Not a big fan of pumpkin pie (I’m a sweet potato pie girl myself), but, I do love everything else pumpkin. Many times when I’ve had pumpkin “spiced” things in the past, it was pumpkin spice without the pumpkin flavor (Am I the only one who has this problem?) Well I decided that this will not be pumpkin “spiced”, but a pumpkin granola with pumpkin and spice. I used dehydrated pumpkin which I make into a powder to achieve this. It is super easy to do. Pumpkin Granola
Real pumpkin goes in this granola, not just the spice. Great for breakfast, over ice cream (did I say that?), in a goody basket for someone for the holidays, or just for snacking.
Equipment
- Cookie sheet
Ingredients
- 2 Cups Oats
- ½ cup Hemp hearts
- ¼ Cup Flax meal
- ½ Cup Pumpkin seeds
- ½ Cup Pecans Chopped
- ¼ Cup Pumpkin powder
- 2 Tsp Pumpkin seasoning
- ½ Cup Maple syrup
- 3 Tsp Coconut sugar
- 2 Tbsp Coconut oil
- 2 Tsp Vanilla
- ½ Cup Dried cranberries
Instructions
- Preheat oven to 325°
- Mix all dry ingredients together except coconut sugar.
- Whisk all wet ingredients together and add the coconut sugar, mixing well.
- Wipe down cookie sheet lightly with oil. Place granola on pan with a thin layer.
- Bake for 20 minutes, Stirring once after 10 minutes.
- After 20 minutes, remove from oven and let rest for 15 – 20 minutes before eating. The granola will get crispier as it cools.
- When Cooled down, add cranberries.
