Collards and Cabbage with Smoked Turkey

A great pork free recipe for those who love meaty greens! Smoked turkey, mustard, seasoned salt and garlic are only part of what gives this it’s great flavor. Occasionally I will add potatoes and add more smoked turkey to make it a one pot meal. Pickled banana peppers is a good addition for a little bit of a kick (also add some of the juice). That all being said, greens are good for you!

Collards and Cabbage with Smoked Turkey
Ingredients
- 1 Smoked turkey wing or leg
- 8 cups water
- 3 cloves garlic Whole
- 1 tbsp olive oil
- ⅓ Cup Onion Diced
- ⅓ Cup Red bell pepper Diced
- 8 Cups Collards Chopped
- 4 Cups Cabbage Chopped
- 1 tbsp Mustard
- 2 tsp Honey Or to taste
- Seasoned salt To taste
- Pepper To taste
- Cayenne pepper To taste
Instructions
- Clean collards thoroughly by soaking and rinsing them to get off all the dirt off them.
- Put water into pot and add smoked turkey over medium heat. When it comes to a boil, turn down to low and allow to simmer. Add garlic cloves. Cook till turkey begins to get tender. It will take about 1½- 2 hours.
- When turkey is cooking, chop/dice vegetables, keep separated, and set aside.
- In a small pan, put olive oil in pan and saute onions and peppers until translucent.
- Once turkey has become tender, pull out garlic cloves and mash. Return to pot and stir. Add mustard, honey, salt and pepper. Add Bell pepper, onion and collards.
- When collards begin to get tender, add cabbage and cook till tender. Serve.
