Potato Egg Salad
Labor day is here, and even if it wasn’t, there’s no law saying you have to have potato salad only on summer holidays! Even with the shutdown on public gatherings, make this for your family gathering. I am always looking for ways to make everything healthier, so I mixed low fat yogurt with the mayo, and leave the skins on the potatoes because there are more nutrients in the skin. I also opt to use smoked paprika over regular paprika. It adds a little more flavor but but is sometimes hard to find. If you have regular paprika available, feel free to use it.
Potato Egg Salad
Potato salad meets egg salad. Special on those summer barbecues, but great at any time!
Ingredients
- 4 Medium Potatoes
- 4 large Eggs
- ¼ Cup Green onions
- ¼ Cup Relish
- ¼ Cup Mayo
- ¼ Cup Low fat plain yogurt
- 2 tsp Whole grain mustard
- Salt & Pepper To taste
- Smoked paprika For garnish
Instructions
- Place whole potatoes in medium pot, and cover with water. On high temperature, bring to the boil and turn heat to low. Place lid on potatoes and let cook till soft.
- While potatoes are cooking, in a small pot, boil eggs for about 10 minutes, turn off heat and put lid on for 5 minutes. Drain off water and run cold water over eggs to cool down.
- In the meantime, slice onion.'
- When potatoes are soft, drain off hot water and run cold water over them to cool down. Once potatoes are cooled down, peel if desired. Smash each potato and dice. Place into bowl and allow to cool down fully by placing bowl in refrigerator or freezer (check frequently and give a stir) until slightly chilled .
- Peel and dice eggs. Place in fridge to cool down.
- Whisk mayo, yogurt, mustard, , relish, until well mixed.
- Place potatoes, eggs, and onions in bowl. Stir in mayo mix. Add in salt and pepper to taste.Put in serving bowl and cover top with paprika.

The smoked paprika adds so much flavor to potato dishes. If you live near a Trader Joes, they carry it. Also, Cost Plus Market sometimes has it as well.
