Banana fig Bran Muffins
I’ve made this basic banana bran muffin for about 30 years now and have made various versions of it. I could have called it “pick your fruit banana bran muffins”, Because you can easily substitute the figs for any other dried fruit (or nuts) and keep the recipe otherwise the same. With this recipe I used half the fat that would normally be used and substituted it with applesauce, which gives the muffins the right amount of moistness. If you would prefer to do a version without oil, you can do so by substituting the 1/4 cup oil for applesauce. I usually prefer to add some oil for the sake of flavor, but without it it is still quite good. I hope you enjoy!
Banana Fig Bran Muffins
Bran muffins have often got a bad rap for being dry and flavorless. Not these! Not only are these muffins moist, but sweet and with the banana and orange zest, full of flavor!
Equipment
- Muffin tin for 12 medium muffins
Ingredients
- 1½ Cups Whole wheat flour
- 1 Cup Bran
- ¾ Tsp Salt
- 1 Cup Mashed bananas
- 2 Eggs
- ¼ Cup Applesauce
- ¼ Cup Oil
- ½ Cup Warmed honey
- ⅓ Cup Buttermilk
- 1 Tsp Baking soda
- ¼ Cup Dried figs Finely diced
- 1 Tbsp Orange zest Optional
Instructions
- Preheat oven to 375°f. Spray or grease 15 muffin tins.
- Mix flour, bran, and salt. Set aside.
- In mixer bowl, mix together mashed banana, eggs, oil, applesauce and honey. Stir together buttermilk and baking soda. Add to banana mixture. Stir in figs and orange zest.
- Add dry ingredients together with wet, stir just till combined.
- Fill muffin tins about ¾ full, and bake for about 25 minutes.
- Best to serve when allowed to rest at least 15 minutes.

There’s lots more bran muffin recipes in my arsenal, which I will time release. If you want to make it healthier for you, consider sweetening it with monkfruit sweetener instead of honey to reduce the sugar content and adding 1/2 cup more buttermilk to make up for the liquid lost from the honey. You can also reduce the fat more using more applesauce as a fat replacement. Keep in mind, this is not a low carb food. Everything in moderation! Let me know how that works for you!
