Lemon Basil Baked Fish

My husband grew up eating fried fish, and I wanted to come up with something that would be a healthier choice for him that he might enjoy. I originally put this on the grill which he enjoyed, however, those moments when the grill wasn’t an option, baking it was a quick and easy way to prepare this lite, flavorful fish.

Lemon Basil Baked fish

This recipe works well for most white fish. Lemon, basil, garlic, butter, olive oil and salt elevate this from a simple salt and pepper recipe without complicating it.

Ingredients
  

  • 5-6 White fish fillets Such as swordfish, whiting, halibut, tilapia,ect.
  • ¼ Cup Basil Finely chopped
  • 2 Cloves Garlic Finely chopped
  • 1 Tbsp Butter Melted
  • 2 Tbsp Olive oil
  • ½ Lemon Juice and zest
  • Kosher Salt to taste

Instructions
 

  • Preheat oven to 450°
  • Finely dice basil and garlic. Place in small bowl.
  • Add oils, lemon, and salt to basil and garlic and mix well.
  • With a pastry brush, brush lemon basil oil on top of fish and place skin down on lightly oiled sheet pan. Bake about 10 minutes or until done (test with fork and if begins to flake, it is ready).
