Chayote Corn Medley
Every household has those veggies that are staples growing up. and when we get on our own, we tend to not go to far from what we know. Well, chayote wasn’t even on the radar of our house. This was a later in life discovery for me that I loved immediately. Because the flavor is very neutral (reminds me of a cross between a apple and jicama), It pairs well with many flavors, and most dishes, and this simple recipe is a personal favorite of mine.
Chayote Corn Medley
The chayote corn medley is good served cold as a salad or a hot dish. It is tender, crisp, sweet and the lime gives it a little tartness. Add a little chili for heat, or fresh cilantro, oregano, parsley or basil for a herbalicious add on!
Ingredients
- 3 Chayote
- 1 Cup Corn
- 1½ Limes
- 3½ Tbsp Olive oil
- ½ Red bell pepper
- Salt and pepper to taste
Instructions
- Chop Chayote and bell pepper into bite sized pieces.
- Heat oil in skillet and heat pan. Add chayote and put on lid, heating on a low heat for about 5 minutes.
- Remove lid and add bell peppers continually stirring. When bell peppers start to soften a little, add corn and salt to pan. When corn is hot, turn off flame, squeeze lime juice on veggies. and stir.
