Chocolate Almond Fudge Granola
I have searched the world over for the fudgiest granola ever, and after searching and experimenting, I finally found it! This is like eating crumbled fudge cookies. What gives it that consistency is the almond butter. It has the crunch factor, but also a soft bite at the same time (If that makes any since to you). This has the deepest chocolate flavor as well. In addition to cocoa powder, it has crushed cacao nibs to add depth of flavor. Even though the day I completed this recipe I did eat it for breakfast with yogurt and berries, It makes a great snack to carry with you for a pick me up, and is phenomenal over ice cream.
Chocolate Almond Fudge Granola
The fudgiest granola you'll ever eat! Have it with milk or yogurt and berries, over ice cream, or straight out of your hand!
Ingredients
- 2 Cups Oats
- ⅔ Cup coconut
- ½ Cup Almond Flour
- ½ Cup Almonds Chopped or sliced
- ¼ Cup Chia seeds
- ¼ Cup Coconut sugar
- 2 Tbsp Cocoa powder
- 2 Tbsp Cacao nibs Crushed to release flavors
- ¼ Tsp Kosher salt Optional
- ⅔ Cup Maple syrup
- 6 Tbsp Almond butter
- 2 Tsp Vanilla extract
- 2 Tbsp Coconut oil
Instructions
- Preheat oven to 325°f.
- Whisk dry ingredients together.
- Whisk wet ingredients together (except coconut oil). Using a spatula or wooden spoon, add wet into dry ingredients and mix well.
- Oil sheet pan with coconut oil. Spread granola evenly onto the sheet pan. Bake for 20 minutes being sure to stir halfway through.
- After 20 minutes, remove from oven and let cool at least 25 minutes. It will get harder as it cools and the flavors will deepen. When cool, break apart to desired sizes and store in an air tight container.
