Kale White Bean Soup
The weather has cooled down and that’s signal for some nice warm, hardy soup. This is an easy soup to prepare with very little prep and can be served in about 30 minutes. It’s vegan, but if you are a meat eater, serve it with your favorite meaty sandwich, or feel free to throw a little meaty goodness in it from that leftover meat in the fridge. Kale White bean soup
This hearty, warm nutritious soup is sure to keep you warm and full on a cold day.
Ingredients
- 2 Tbsp olive oil
- 3 Cloves Garlic Diced
- ⅙ Cup Onions Finely diced
- 4 Cups Water or broth
- ¼ Cup Tomato Paste
- Sweetener To taste
- 1 Tsp Sea salt
- 2 Bay leaves
- ¾ Cups Carrots Thick slices
- 4 Cups Kale Chopped
- 1½ Cups White beans Cooked
Instructions
- Heat up oil in medium large pot and add onions and add garlic when onions are translucent . Cook till garlic is slightly brown and toasty.
- In the same pot, ,mix tomato paste and a little water. Add remaining amount of water and mix well. Add bay leaves and, cook on medium heat. Add salt and sweetener to taste.
- When water almost reaches a boil, add kale. When kale shrinks down, add carrots and beans. Allow to cook till carrots are tender and kale is desired consistency and serve.
