I love everything sweet potato. From savory dishes to pies- it’s all good to me! What makes it even better, is sweet potatoes are highly nutritious. They are rich in vitamins A, C and potassium, to start with. Whenever I get to an Asian market, one of the things I keep my eyes open for is purple sweet potatoes, which sometimes is a challenge to find. Just recently, to my surprise, as I was making my biweekly trip to Sprouts Market, guess what I found! There were 3 of these gems left and I eagerly snatched them up. Didn’t know what exactly I was going to do with them, but figured it out 4 days later…

Baked Purple Sweet Potato Chips

This guilt free yummy snack is low fat, low glycemic, high in vitamins and minerals, and high in flavor!

Total Time 1 hr
Course Snack

Ingredients
  

  • 4 Cups Thinly Sliced purple sweet potatoes
  • ¼ Cup Coconut oil
  • Salt To taste

Instructions
 

  • Set oven to 275°
  • Toss potatoes in oil. Lightly sprinkle with salt.
  • Lay out potatoes onto sheet pan single layer. Bake for about an hour, occasionally checking and turning them over when needed. When at your desired crisp, pull from oven and allow to cool. Store in airtight container.
