Corn,Cucumber and Fennel Salad
Fennel for some is an acquired taste. If you want to give it a go, this recipe is a great start to introduce yourself to this flavor. Fennel has the crispness and mouthfeel of celery, and the flavor of licorice. The ratio and flavors of the corn, tomato, cucumber and lemon provide a great balance of flavors with the fennel which complements it well.
Corn and Fennel Salad
New to fennel? This is a great introduction to the flavor which is complemented by the flavors of corn, tomato, cucumber, and lemon.
Ingredients
- 1 Cup Corn
- ½ Cup Fennel Sliced thinly
- 3 Tbsp Fennel fronds finely chopped
- ½ Cup Cucumber Diced
- ⅓ Cup Tomato Diced
- 6 Tbsp Lemon juice
- 6 Tbsp Olive oil
- 2 Tbsp Rice vinegar
- 1½ Tsp Lemon zest
- 1 Tsp Fresh garlic
- ½ Tsp Garlic powder
- Salt To taste
- Pepper To taste
- Sweetener To taste
Instructions
- For the dressing: In a bowl, whisk together lemon juice, olive oil, and vinegar. Add seasonings, lemon zest, and sweetener. Whisk or shake well and set aside.
- Put corn in medium bowl.
- Slice fennel and chop fennel fronds . Dice Tomato and cucumbers. Add to corn.
- Pour dressing over veggies and toss well.
