Roasted Garlic Broccoli with Lemon
I’ve had broccoli cooked many ways, and roasted (in my ever so humble opinion), is the best. This also could’ve been called, “Better than boiled broccoli”. Boiled broccoli is limp and flavorless with nutrients left into the water, and a strange green-brown color. Steamed or stir fried are good, but the concentrated flavor in the roasting process is far more superior. In this easy recipe, the lemon adds brightness, and the garlic brings it’s own flavor to the party which pairs well with the lemon. I like my broccoli with a little bite to it, but if you like it soft, and it’s already slightly brown, cover with a little foil and allow it to cook a little longer. If you’ve been eating boiled broccoli up until now, you’ll never go back.
Roasted Garlic Broccoli with Lemon
Crisp, vibrant, and full of flavor best describes this side dish that complements most any meal.
Ingredients
- 1½ lbs Broccoli
- 4 Cloves Garlic Diced
- 3 Tbsp Olive oil
- 1 Lemon Juice and zest
- Salt & pepper To taste
Instructions
- Preheat oven to 400°F
- Slice broccoli and dice garlic. Set aside.
- With a large bowl, fill halfway with water and ice.
- Get a large pot and fill halfway with water and bring to a boil. Put broccoli into boiling water for about 2 minutes. Pull out of water and put into ice bath to shock.
- Take broccoli out of ice bath and onto a sheet pan. Pour olive oil over broccoli, sprinkle on garlic, and toss with hands. Place in oven and roast till slightly brown on top and desired softness.
- Sprinkle salt and pepper to taste and squeeze lemon juice and zest to taste and toss.
