Salmon, Eggs, and Kale Scramble
This was one of my favorites when I was on the Keto diet. Breakfast can’t get any healthier than this! Low carb, healthy fats, high fiber, high in protein, vitamin and mineral rich breakfast is a great way to start off your day. Any healthy fat can be used for cooking this , but I prefer using an olive oil blend as it doesn’t burn as easily as olive oil on its own. For those who are lactose intolerant, substitute the milk for water. Great add on’s would be a little fresh dill on top, or a little green onion. Enjoy this easy, quick, filling, super healthy delicious breakfast!
Salmon and Kale egg scramble
A nutrient dense breakfast great to start off the day!
Ingredients
- 3 Oz Salmon
- Lite olive Oil Enough to oil pan for cooking
- 4 Eggs
- 2 Tbsp Milk or water
- ¾ Cup Kale chopped
- 2 Cloves Garlic Diced
- Salt & Pepper To Taste
Instructions
- Heat skillet with a little oil. Salt and pepper salmon and place in pan and cook till done and skin is crispy. Remove skin and slice into small pieces.
- Chop kale and put in preheated pan with oil and cook till tender. Add diced garlic.
- Put eggs in bowl with a little salt and pepper and whisk till slightly foamy.
- Add egg and scramble with Kale and garlic in hot pan. When eggs are fully cooked, put onto plate and top with crumbled salmon and crispy skin.
