Farro and Egg Breakfast Bowl
People seem to love meal bowls. Rice bowls, noodle bowls, poke bowls. All types of bowls. But hey, wait, I’ve got an idea! How about a breakfast bowl with farro as the base? Farro, spinach, turkey sausage, tomato, topped with an egg. Sounds great? Well here it is…
Farro Breakfast bowl
Farro, spinach, turkey sausage and tomato topped with an egg, and you got yourself a healthy breakfast in a bowl!
Ingredients
- ⅔ Cup Farro
- 1⅓ Cup Water Mix with stock if desired
- Salt To taste
- ½ Cup Ground turkey breakfast sausage
- 1 Large clove garlic Diced finely
- 2 Medium Roma Tomatoes Diced
- 2 Cups Spinach
- Eggs Desired amount
Instructions
- Rinse farro. Put water/stock in small pot, add farro and a little salt and bring to a boil. Turn down to low heat and simmer with a lid on top for about 30 minutes.
- While farro is cooking, heat a pan with nonstick spray or small amount of oil and cook sausage, and garlic. Remove and set aside into bowl. Put a little oil into pan and add tomatoes into hot pan and cook long enough to release some of the juices and soften slightly. Turn off heat and add spinach. Stir till slightly wilted. Add to bowl with sausage and garlic.
- When farro is ready, if there is any excess liquid, then drain. Add farro to bowl with sausage and spinach mix and toss.
- Prepare eggs. Place farro mix into 2 serving bowls and place eggs on top. Add a little salt and pepper to taste and you are now ready to eat!
