Golden Kale and Sweet Potato Salad
Sweet and bitter. Creamy and crunchy. Add a little spice and citrus and you’ve got this delicious, nutritious super salad with kale, sweet potatoes, and raisins tossed with creamy Golden tumeric dressing.
Golden Kale and Sweet Potato Salad
This super food salad is not only nutrient dense, but tasty as well.

Ingredients
- 2½ Cups sliced kale
- 3/4 Cup Sweet potato
- 2 Tbsp Golden Raisins
- 3 Tbsp Orange juice
- ¼ tsp Golden tumeric spice mix
- 1½ Tbsp Mayo
- 1 Tbsp Yogurt
- pinch Salt
- pinch Pepper
Instructions
- Dice sweet potato into small pieces. Steam about 5 minutes until tender yet firm.
- While sweet potato is cooking, put 1 Tbsp orange juice in microwave for about 10 seconds. Add golden spice mix and mix until desolved. Mix in mayo and yogurt well. Add remaining orange juice and salt and pepper to taste. set aside.
- When sweet potatoes are done, remove from steamer into bowl and set aside into the freezer to cool.
- While sweet potato is cooling down, wash, dry, and slice kale into small strips. Put into medium size bowl.
- Remove sweet potato from freezer and mix with kale. Add raisins and dressing and toss.
