Chewy Golden Cookies
I discovered this recipe by accident when playing around with granola recipes. I love when accidents like this happen! This is the simplest cookie recipe ever! 2 bowls. No dairy, no eggs, no leaveners. Basically nuts, almond flour, gluten free oats, coconut, spices, honey and oil (If you want to make it vegan, use maple syrup instead of honey). This is not an exact science, and you can do so many versions of this with your own favorite seeds or nuts. The “Golden” part comes from the spice mix that flavors the cookies so well, which is also medicinal. It consists of turmeric, ginger (both of which are best known for being immune boosters, and high in anti inflammatory properties), cinnamon, with a pinch of cardamom and nutmeg as well as pepper. Chewy Golden Cookies

- Cookie sheet
Ingredients
- ⅔ cup Almond flour
- ½ cup Coconut Shredded
- ½ Cup Walnuts Chopped
- ¼ Cup Currants or chopped raisins
- ¼ Cup Gluten free oats
- 2 Tsp Golden spice mix Click above for recipe
- 2 Tsp Coconut oil
- ⅓ Cup Honey
Instructions
- Preheat oven to 350°f.
- Mix together the dry ingredients.
- Mix together the honey (or maple syrup ) and coconut oil.
- Blend the dry and wet ingredients together well. You should have a firm dough. If the dough still is a little crumbly, wet your hands lightly with cold water and mix with your hands to form the dough.
- Wet hands slightly, and using a tablespoon make 12 round balls with your hands and press lightly on a greased cookie sheet to flatten the bottoms. The cookies will spread and puff up slightly.
- Bake for 15 minutes, They will be soft on top and brown and crispy around the edges. They will firm up and remain chewy once they've cooled down after about 10-15 minutes.
